Alta Cima 6.330 Premium Reserve 2003 - This red wine created for gourmets is 75% Cabernet Sauvignon, 10% Merlot, 10% Syrah, and 5% Petite Verdot this vintage. The name honors the thick and mighty magma of the Andean volcanoes, especially the perfectly formed Parinacota which has a 6,330 meter elevation. The vineyard is located at the mouth of the Lontue Valley with muddy clay soil fortified with volcanic ashes, 110 km. from the Pacific Ocean and 65 km. from the Andes range. The local high summits (Alta Cimas) are Peteroa, Planchon, and Descabezado. The southerly wind moderates daytime temperature and the nights are cold, giving slow ripening. All grapes are hand-harvested then hand-selection; destemming occurs on the second floor of the winery, directly above the fermenting vats, allowing gravity rather than pumps to maintain maximum integrity of the grape before fermentation begins. 60% of the wine evolves in French oak barrels and 40% in stainless steel vats. There is only one red ensemblage per year. The wine displays freshness, fruitiness, and juiciness backed up with round and silky tannins and elegance. There is a generous taste of fresh black fruits with a long persistent finish. The Sommelier suggests pairing with Duck Magret with fig sauce, lamb chops with raspberry sauce, roast beef, ostrich tenderloin with herbs and red peppers, baked pork rack with garlic & red hot chili pepper & brown sugar, pork tenderloin in mustard sauce, game, and ripe cheeses. Owner/Winemaker Klaus Schröder who studied at Geisenheim was formerly at San Pedro, Errazuriz, and Santa Rita wineries. Family owned and estate bottled, less than 1,000 cases made.
